Ingredients:
- 2/3 cup (85g) all-purpose flour
- 1/4 cup (25g) unsweetened cocoa powder

- 2 large eggs
- 1/2 cup (100g) granulated sugar
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 6 tablespoons (85g) unsalted butter, melted and cooled, plus extra for greasing the madeleine molds
- Optional: powdered sugar for dusting
Instructions:
- Preheat the oven: Preheat your oven to 350°F (175°C). Grease the madeleine molds with butter and lightly dust them with flour, tapping out any excess flour.
- Prepare the dry ingredients: In a small bowl, sift together the flour, cocoa powder, and baking powder. Set aside.
- Beat the eggs and sugar: In a large mixing bowl, beat the eggs and granulated sugar together with an electric mixer or whisk until pale and thick, about 3-4 minutes. Add the vanilla extract and a pinch of salt, and mix until combined.
- Fold in the dry ingredients: Gently fold the sifted dry ingredients into the egg mixture using a spatula until just combined. Be careful not to overmix.
- Add the melted butter: Pour the melted butter into the batter and gently fold it in until fully incorporated.
- Fill the madeleine molds: Spoon the batter into the prepared madeleine molds, filling each mold about 3/4 full. Smooth the tops of the batter with the back of a spoon if needed.
