Ingredients:
For the baklava:
- 1 package (16 ounces) of phyllo dough, thawed
- 1 cup unsalted butter, melted

- 1/2 cup granulated sugar
- 1/4 cup cocoa powder
- 1 teaspoon ground cinnamon
For the syrup:
- 1 cup granulated sugar
- 1 cup water
- 1/2 cup honey
- 1 teaspoon vanilla extract
- Optional: orange or lemon peel, cinnamon stick, or cloves for added flavor (remove before using syrup)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a baking dish or pan with some melted butter.
- In a mixing bowl, combine the chopped nuts, granulated sugar, cocoa powder, and ground cinnamon. Mix well and set aside.
- Carefully unroll the phyllo dough and cover it with a damp kitchen towel to prevent it from drying out.
- Place one sheet of phyllo dough in the prepared baking dish and brush it generously with melted butter. Repeat this process, layering and buttering each sheet of phyllo dough, until you have used about half of the sheets.

- Using a sharp knife, carefully cut the baklava into diamond or square shapes, making sure to cut all the way through the layers.
- Bake the baklava in the preheated oven for 45-50 minutes, or until golden brown and crisp.
- While the baklava is baking, prepare the syrup. In a saucepan, combine the granulated sugar, water, honey, and optional flavorings (such as orange or lemon peel, cinnamon stick, or cloves). Bring the mixture to a boil, then reduce the heat and simmer for about 10-15 minutes, until slightly thickened. Remove from heat and stir in the vanilla extract.
- Once the baklava is done baking, remove it from the oven and immediately pour the warm syrup evenly over the hot baklava, allowing it to soak in.
- Allow the baklava to cool completely in the pan before serving. This will allow the layers to set and the flavors to meld together.
